Tamales
This morning I went to make tamales with Carmen and Blanca. They are wonderful women and have quite a talent for making EXCELLENT tamales. Good tamales start with good ingredients. They get their masa from California (it is better and cheaper!). They know what additional ingredients to add to the masa too and just how long to blend it all together. They had prepared a delicious pork filling before I had arrived. Once the masa was ready and the husks were moisten we began to assemble the tamales. Once assembled they are steamed for almost an hour and then we check to see if they are done. We open the husk to see how easily the tamale separates from it. That is how we know it is done. These generous sisters gave me a large casserole dish filled with tamales to take home and a priceless memory of their friendship and love.
